This one is a classic! you can prepare it for breakfast, for lunch or just if you need a light snack . It is a lovely vegan option if you have veggie friends visiting, kids love it and it has all the good fats, omegas and proteins you need in a couple of bits.
What you will need…
There is different versions of avocado toast, you can use you favorite veggies for toppings and get a little more creative. I use for this particular recipe Chickpeas.
- 4 small avocados.
- 1 can of chickpeas (or you can boil a bag until they are tender)
- 2 cups or arugula
- Sesame seeds
- Multigrain Bread with seeds
Get it going.
Open you avocados and diced them, use a mortar to make a pure (add salt if you need to) put in on the side. On a mix pan put the chickpeas with your favorite spices (I have a mix of 14 spices from Badia Ufff) and 2 spoons of olive oil, mix all together. Then, put 2 slices of bread (or as many you feel) in the toaster. once everything is ready to put together, start spreading the avocado in the toast, add the chickpeas mix, put some arugula in the top and spread some sesame seeds on it. Ta da! you are done, you can add some tortilla chips or your favorite chips to complement your plate. I love the lime hint corn chips from Late July. Enjoy! (makes 4 portions, 2 toast each person).
